摘要:
目的比较分析福州市城乡居民膳食结构和慢性病患病情况,为开展慢性病饮食干预提供理论依据。方 法按分层整群随机抽样方法把福州市分成两层(城市与农村),在每一层抽取一个监测点(仓山区与闽侯 县),每个监测点随机抽取1个社区或村委会,按地理位置设50户为一群并随机抽取8个群,采用食物频率法和慢 性病患病情况表调查20~65岁常住居民876人的膳食结构和慢性病患病情况,同时开展身高、体质量、血压、血 糖、血脂检测。结果城乡各性别各年龄组居民的乳类和水果摄入均低于推荐量,而盐摄入高于推荐量。与同 性别农村组比较,城市男性豆类、乳类、蛋类、饮料类的摄入量显著增加而谷薯类、蔬菜的摄入量明显下降,城 市女性豆类、乳类、蛋类的摄入量显著增加而谷薯类、蔬菜类、肉类、小吃零食类的摄入量明显下降(均P< 0.05)。与同年龄农村组比较,城市居民各年龄组谷薯类摄入量及20~岁组蔬菜类摄入量、35~岁组肉类和小吃零 食摄入量、50~65 岁组肉类、蔬菜类和饮料类摄入量均显著下降(均P<0.05);城市居民各年龄组乳类、水产品 摄入量及20~岁组豆类、水果类、蛋类、饮料类摄入量和35~岁组蛋类、饮料类摄入量均显著增加(均P< 0.05)。与农村居民比较,城市居民的能量摄入量、碳水化合物摄入量和供能比均明显减少而蛋白质摄入量和供能 比、脂肪供能比均明显增加(均P<0.01)。城市女性超重检出率明显低于农村女性和城乡男性(均P<0.01)。结 论福州市城乡居民膳食结构仍存在不合理,均有向高脂肪膳食转型趋势;城乡男性居民超重明显。
Abstract:
Objective To compare and analyze the various types of food intake and detection rate of chronic disease between the urban and rural residents in Fuzhou, and to provide a theoretical basis for conducting chronic dietary intervention. Methods An urban and a rural area were randomly selected as a monitoring point in Fuzhou by stratified cluster random sampling method. 8 groups with 50 families each were randomly selected according to the actual household distributions in the two communities. 876 people were investigated with questionnaires on their food frequency and chronic diseases fact sheet. Meanwhile physical examinations including height, weight, blood sugar, blood pressure, etc were also conducted. Results Milk and fruit intakes were below the recommended amount, while salt intake was higher than the recom - mended amount in the urban and rural residents of different sex and age. Compared with the same sex rural group, intakes of beans, dairy, eggs, drinks in urban males increased significantly, while the intakes of valley potato, vegetables decreased. Beans, dairy, egg intakes increased significantly in urban females, while the intakes of valley potato, vegetables, meats, snacks decreased significantly (P<0.01/P<0.05).Compared with the same age group in rural areas, valley potato in each age group, the intakes of vegetable in the 20- 35 age group, the intakes of meats and snacks in the 35- 50 age group, the intakes of meat, vegetables and beverages in the 50- 65 age group decreased significantly (P<0.01, P<0.05). At the same time the intakes of dairy, fish in each age group, the intakes of legumes, fruits, eggs, drinks in the 20- 35 age group, the intakes of eggs and drinks in the 35- 50 age group increased significantly (P< 0.01, P<0.05). Compared with rural residents, the intakes of energy and carbohydrate, energy supply ratio significantly reduced. While the intakes of protein, the energy ratio of protein and fat significantly increased in urban residents (P<0.01, P<0.05). The detection rate of overweight in the urban women was significantly lower than that in the rural women, urban and rural men (P<0.01, P<0.05). Conclusion Dietary structure is still unreasonable in urban and rural residents in Fuzhou, and both of them have transition to high-fat diet trend. The detection rate of overweight is obvious in urban and rural male residents.
